Cà rốt gọt vỏ băm nhỏ. Bóc bóc sạch vỏ, giữ lại đuôi tôm. Hành lá thái nhỏ. Nấm mèo ngâm nở, rửa sạch băm nhỏ. Cho tất cả nguyên liệu vào tô lớn, thêm 2 muỗng cà phê hạt nêm, 1 muỗng cà phê tiêu trộn cho quyện đều.

Đun nóng nhiều dầu ăn trong chảo, thả các cuộn chả ram vào chiên ngập dầu ở lửa vừa. Khi chả ram sắp chín thì tăng lửa to, chiên cho chả ram giòn rụm thì vớt ra để ráo dầu. Món chả ram chấm với tương ớt là tuyệt. Có thể ăn cùng với bún thịt nướng cũng ngon nhé!
